Wash and rinse the seeds
quinoa when wet it develops a plant substance produced by the plant and which envelops the seed called saponin. It protects the plant from insects and birds. It is bitter and it can be poisonous. This is why it is necessary to rinse the seeds well before cooking them until the rinsing water no longer foams.

Pour the seeds into a bowl, wash them with your fingers, rinse them twice. Let them soak for 10 minutes and drain them.

Cook the quinoa

1- When the water boils, pour the seeds without adding salt. Wait for the resumption of boiling, stirring lightly.

When the water is boiling, place a lid on the saucepan and cook over medium heat, 10 to 12 minutes, until the small white sprout comes off the seed and the seeds are translucent.

Remove the quinoa from the heat and let the seeds swell for 10 to 15 minutes. Add salt just before serving.

They can be served hot, like rice or cold, in a salad.
